A new tradition for our family from Rose’s family and we love it! I look forward to it each holiday we get to spend with her.
1/3 C. Flour
1 C. Sugar
2 T. Butter
1 tsp. Vanilla
1/4 tsp. Salt
2 C. Milk
3 Egg Whites
3 Slightly beaten Egg Yolks
6 T. Sugar
2 ox. Unsweetened Chocolate, Melted
1 (9″) Baked Pastry Shell (Pie Crust recipe is listed separately)
PUT chocolate in milk and cook over a double boiler, chocolate will melt while milk scalds. Mix flour, sugar, salt; gradually add flour mixture to chocolate and milk mixture. Cook until thick, stirring constantly (about 5 minutes after adding all the dry ingredients). Add small amount of mixture to egg yolks. Stir egg yolks into remaining hot mixture, Cook 2 minutes. Cool; add butter and vanilla. Pour into baked pie shell. Top with either whipped cream or meringue. (We used Whip Cream).
OPTIONAL: Meringue – Beat 3 Egg whites until foamy and gradually add sugar (6 T.). Beat until mixture forms soft moist pads. Spread over pie filling, sealing edges. Bake in 350 degree oven 12-15 minutes.
