These little delights were served in individual wax paper bags at the first Sparrow House BBQ! A delicious cookie that was unaffected by the raging heat that day!
2 3/4 C. Flour 1 tsp. Baking Soda
1 Egg 1/2 tsp. Baking Powder
1/2 tsp. Salt 1 1/2 C. Sugar
1 T. Lemon Zest 1/2 tsp. Vanilla
2 T. Lemon Juice 1 C. Butter, softened
Preheat oven to 350 degrees; line baking sheets with parchment paper.
Beat butter till smooth; add sugar; beat; add lemon zest, egg, vanillas, & Lemon Juice; beat. Carefully add in dry ingredients. Blend. Using 2 T. size make balls of dough; roll in a bowl of sugar to coat ball. Place 2″ apart on baking sheet. Bake 8-9 min.; till set around edges. Let rest on baking sheet 3-4 min. before moving to cool.
*Love them with Lime or Grapefruit too – just substitute zests and juices.
