It doesn’t matter where we gather for Christmas – this is our tradition Christmas Morning breakfast and it was no different at Sparrow House this year. We also had it for New Year’s Day breakfast with the Kuoha’s at the Sparrow House.
6 oz. Swiss cheese, grated
1 pkg. Jimmy Dean Regular Sausage
1 Large Onion, Quartered and sliced
2 T,. Flour
4 Eggs
2 C. Evaporated Milk
1 tsp. Salt
1 Dash Nutmeg
10 oz, Frozen Chopped Spinach, thawed, squeeze water out
CRUST: Pate Brisee
1 3/4 C. Flour
3/4 C. Butter
1 Large Egg
1 Dash Salt
CRUST: Preheat oven to 425 degrees. Place ingredients in food processor and process for 10 seconds. Remove dough and form a ball. Pat evenly or roll and place into a 10″ quiche pan. Bake for 10 minutes until dry but not brown.
FILLING: Set oven to 350 degrees. Sprinkle dry spinach over bottom of crust. Fry sausage till crumbly and done. Drain, reserving 2 T. great. Fry sliced onion in sausage drippings until lightly browned. Sprinkle flour over onion. Stir to blend. Remove from heat and set aside. In food processor combine eggs, milk, salt, nutmeg and onion mixture. Process till combined. Sprinkle cheese on top of spinach. Sprinkle sausage on top of cheese. Pour egg mixture carefully over everything in crust. Bake for 45 minutes or until knife inserted into center comes out clean. Allow to cool for 5 min. before cutting. Serve immediately.
